    Stir with ice, then serve Neat in a Old-Fashioned/Rocks Glass


    Notes: use 2 glasses, pack one glass with ice to chill, muddle the sugar cube and bitters in the other with a splash of water until the sugar dissolves. Add cognac and a cube or two of ice, stir to mix well. throw the ice out of the other glass, then swirl the absinthe and discard any extra. strain the cognac into the absinthe glass, twist the lemon over the glass, then rub around the rim and toss in. Also optional to substitute rye for cognac.
